RECIPE: Stir-fried SHRIMP with TOMATOES and CAPERS


Stir-fried shrimp with tomatoes and 

capers.




1 lb cleaned shrimp3 plum tomatoes sliced in 8 wedges2-3 ribs sliced celery (or water chestnuts)1 TBSP capers with juice


Saute celery in olive oil 3 minutes. 

Add shrimp and saute 3 minutes. 

Add tomatoes and capers and toss lightly for 1 minute. 

Serve over rice, rice noodles or pasta. (If you can't get or afford fresh shrimp, opt for frozen RAW shrimp - they have less sodium than frozen cooked shrimp.)
